Oh, hello there, you sexy little morsels of sweet and savory goodness. You look stunning in that glistening robe of Sage Brown Butter.

This year, I’ve turned my sweet potatoes up a notch. A nice departure from the mundane, often dried out, and pretty boring sweet potatoes of yesteryear. Also, this is a much healthier version than those that have been slathered in brown sugar and marshmallow goop.

These sweet potatoes are roasted to perfection with honey, olive oil, and rosemary, and then coated with melted sage brown butter and sprinkled with sea salt. They are sweet, savory, nutty, fragrant, and pretty addictive!

You can make my Sage Brown Butter recipe days or even months in advance, and then the sweet potato part is quite simple and quick, with ridiculously tasty results. I have written the recipe in a portion size of 2 cups. This is enough to adequately serve as a side for 2 people. Multiply as needed 😉

Sage Brown Butter Sweet Potatoes

Ingredients:

Yields 2 Cups

  • 2 Cups Sweet Potatoes, peeled and cubed
  • 1/2 tsp. Honey
  • 1/2 tsp. Olive Oil
  • 1 Tbsp. Fresh Rosemary, chopped
  • 1/8 tsp. White Pepper
  • 1 Tbsp. Sage Brown Butter 
  • Sea Salt

Directions:

Preheat oven to 350°

In a bowl, whisk together honey, olive oil, rosemary, and white pepper. Add sweet potatoes into the bowl and stir until well coated.

On a baking sheet, spread sweet potatoes evenly in one layer. Sprinkle with sea salt.

Roast the potatoes in the preheated oven for 25 minutes. Remove from oven.

In a saucepan over medium heat, begin melting the Sage Brown Butter. Add sweet potatoes into the saucepan and stir until well coated. Allow to cook for about 2-5 minutes until coated and warm, sprinkle with sea salt to taste, and serve.
